Ingredients

Batter for French Toast

  • 1 ¼ cup non-dairy milk
  • cup non-dairy creamer
  • ¼ cup raw sugar or maple syrup
  • 2 Tablespoons arrowroot starch or cornstarch
  • 3 Tablespoons ground chia seed
  • 2 teaspoons flax meal
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt

For the Pan

  • 10–12 slices gluten free bread
  • 1 cup sliced strawberries or whole blueberries

Icing/glaze (optional)

  • cup maple syrup
  • cup powdered sugar
  • 1 teaspoon lemon juice
  • 2 Tablespoons melted vegan butter or refined coconut oil

Instructions

  1. Preheat the oven to 350°F and line a bread pan with parchment paper.
  2. In a large bowl, whisk together the batter ingredients and let sit for 10 minutes to thicken.
  3. Cut the bread into small pieces and soak in the batter for 15 minutes.
  4. Mix in the berries and place the soaked bread into the lined pan, adding some berries on top.
  5. Bake for 35–40 minutes until the top is golden and firm to the touch.
  6. Let cool for 15 minutes before removing from the pan.
  7. While cooling, prepare the glaze by combining its ingredients in a saucepan and whisking until smooth.
  8. Pour the glaze over the warm bread before serving.
