Ingredients

The batter

  • ¾ cup water or non-dairy milk
  • 2 tablespoons arrowroot starch (or tapioca starch)
  • 1 tablespoon maple syrup
  • ½ teaspoon ground cinnamon (optional)

The bread

  • 6 slices thickly sliced bread

For cooking

  • as needed none olive oil (for greasing the pan)

Instructions

  1. Grease the skillet with olive oil and preheat it over medium-low heat.
  2. In a bowl, combine the water or non-dairy milk, starch, maple syrup, and cinnamon, and mix well.
  3. Dip a slice of bread into the mixture, coating both sides quickly to avoid sogginess.
  4. Place the coated bread in the skillet and let it sizzle.
  5. After 2 to 3 minutes, flip the bread and cook the other side, flipping every minute or two until golden.
  6. Repeat with the remaining bread and mixture, stirring the mixture each time.
  7. Keep the cooked slices warm in an oven until all are cooked.
  8. Serve warm with fruit and maple syrup if desired.
