Ingredients

The batter

  • 1 Tbsp chia seeds
  • ½ Tbsp agave nectar or maple syrup
  • 1 cup unsweetened almond milk
  • ½ tsp ground cinnamon
  • ½ tsp vanilla extract

The bread

  • 4-5 slices sturdy bread

Instructions

  1. Mix all ingredients except the bread in a large, shallow bowl and refrigerate for 10-20 minutes to activate the chia seeds.
  2. Preheat a griddle to medium heat and grease with vegan butter or coconut oil.
  3. Dip each slice of bread in the batter for about 20 seconds on each side.
  4. Cook on the griddle until golden brown on both sides, about 3-4 minutes per side.
  5. Serve with desired toppings such as coconut whipped cream, strawberries, and maple syrup.
