How to Freeze Pomegranate Seeds

Instructions
- Cover the kitchen counter with an old kitchen cloth to protect it from stains.
- Roll the pomegranate on the countertop to loosen the seeds.
- Cut off the top of the pomegranate with a sharp knife.
- Score the fruit down either side and gently rip it in half.
- Fill a bowl with cold water and soak the pomegranate halves for 2 minutes.
- Whack each half with a wooden spoon to dislodge the seeds.
- Scoop out the pith and remove the seeds from the water.
- Dry the seeds thoroughly with paper towels.
- Line a baking tray with wax paper and place the seeds in a single layer.
- Freeze the seeds for at least 2 hours, or up to 24 hours.
- Transfer the seeds to a freezer-friendly bag, removing as much air as possible.
- Store the frozen seeds in the freezer for up to 4 months.
