Ingredients

  • 2 cups all-purpose flour
  • ½ cup Bob's Red Mill Almond Protein Powder
  • 1 tsp baking powder
  • tsp baking soda
  • ½ tsp salt
  • 1 cup mashed banana
  • cup butter or coconut oil
  • 1 cup coconut sugar
  • 2 pieces egg replacements or regular eggs
  • 1 tsp vanilla
  • cup almond milk

Instructions

  1. Preheat the oven to 350°F and prepare a bread tin with parchment paper and cooking oil spray.
  2. In a large bowl, mix the flour, almond protein powder, baking soda, baking powder, and salt.
  3. In another bowl, combine the mashed banana with melted butter or oil, coconut sugar, egg replacement, vanilla, and almond milk. Whisk until mixed.
  4. Combine the dry ingredients with the wet ingredients and stir until well mixed.
  5. Pour the batter into the prepared baking tin and bake for 50-55 minutes.
  6. Allow to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
