Ingredients

  • ¼ cup fresh lemon juice
  • 1 small clove garlic, grated
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon sea salt
  • to taste freshly ground black pepper
  • ½ teaspoon honey or maple syrup (optional)
  • ¼ to ⅓ cup extra-virgin olive oil
  • ½ teaspoon fresh or dried thyme (optional)

Instructions

  1. In a small bowl, whisk together the lemon juice, garlic, mustard, salt, pepper, and honey if using.
  2. Drizzle in the olive oil while whisking continuously until the dressing is emulsified.
  3. Alternatively, combine all ingredients in a jar with a tight-fitting lid and shake to combine.
  4. Taste the dressing and add more olive oil if it is too tangy.
  5. Add thyme if desired, and season to taste.
  6. Store in the fridge for up to 1 week.
