Ingredients

  • cup extra-virgin olive oil
  • cup lemon juice (from about 2 lemons)
  • 2 tablespoons Dijon mustard
  • 1 to 2 tablespoons honey or maple syrup
  • 3 cloves garlic, pressed or minced
  • ¼ teaspoon fine salt
  • to taste freshly ground black pepper
  • pinch red pepper flakes (optional)

Instructions

  1. Combine all ingredients in a bowl.
  2. Whisk until blended.
  3. Season with black pepper and adjust sweetness with more honey if needed.
  4. Store in the refrigerator, covered, for up to 10 days.
