Vegan Mint Hot Chocolate

Instructions
- Heat the coconut milk and chopped mint leaves in a small pot until hot but not boiling.
- Remove the pot from the heat and let it sit covered for 30 to 60 minutes to steep.
- Strain the milk to remove the mint leaves and return the milk to the pot.
- Stir in the remaining ingredients over medium heat.
- Whisk the mixture for a few minutes until it’s warm and serve immediately.
