Simple Vegan Hot Chocolate

Ingredients

The base

  • 1 cup unsweetened almond milk
  • 1 Tbsp unsweetened cocoa powder
  • Tbsp dairy-free semisweet chocolate (chips or bar, chopped)

Sweetener and flavoring

  • 1 Tbsp raw sugar or ½ packet powdered stevia
  • tsp peppermint extract (optional)

Topping

  • to taste coconut whipped cream (optional)

Instructions

  1. Heat almond milk in a large mug in the microwave for 1 minute or in a saucepan over medium heat.
  2. Once warm, whisk in cocoa powder, chocolate, and sweetener until combined.
  3. Continue heating until fully combined and at your preferred temperature.
  4. Taste and adjust sweetness if needed.
  5. Stir in peppermint extract if using and top with coconut whipped cream.
