Goat Cheese Quiche

Instructions
- Prepare the pie crust dough and chill for at least 1 hour.
- Blind bake the crust by lining it with foil and filling it with weights, then bake at 400°F for 15 minutes.
- Remove the weights and poke holes in the crust, then bake for another 6 to 8 minutes.
- Sauté the onions in olive oil until caramelized, about 30 minutes.
- Add spinach to the onions and stir in garlic, salt, pepper, and oregano.
- In a bowl, whisk together milk and eggs, then fold in the spinach mixture, goat cheese, and red pepper.
- Pour the filling into the crust and bake at 350°F for 45 minutes to 1 hour.
- Let cool for 15 minutes before slicing and serving.
