Ingredients

The crust

  • 1 9-inch pie crust

The filling

  • 1 tablespoon extra virgin olive oil
  • 1 large yellow onion
  • 3 cups fresh baby spinach
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon dried oregano
  • 1 clove garlic
  • ½ cup diced roasted red pepper
  • 5 ounces goat cheese
  • 1 cup 2% milk
  • 4 large eggs

Instructions

  1. Prepare the pie crust dough and chill for at least 1 hour.
  2. Blind bake the crust by lining it with foil and filling it with weights, then bake at 400°F for 15 minutes.
  3. Remove the weights and poke holes in the crust, then bake for another 6 to 8 minutes.
  4. Sauté the onions in olive oil until caramelized, about 30 minutes.
  5. Add spinach to the onions and stir in garlic, salt, pepper, and oregano.
  6. In a bowl, whisk together milk and eggs, then fold in the spinach mixture, goat cheese, and red pepper.
  7. Pour the filling into the crust and bake at 350°F for 45 minutes to 1 hour.
  8. Let cool for 15 minutes before slicing and serving.
