Ingredients

The crust

  • 1 9-inch frozen pie crust, regular not deep-dish

The filling

  • 2 teaspoons olive oil
  • 2 cups chopped fresh spinach
  • 1 oz shredded 2% milk Mozzarella cheese
  • 2 oz crumbled goat cheese
  • 2 oz thinly sliced prosciutto, chopped
  • 4 large eggs
  • ¾ cup skim milk
  • ¼ - ½ teaspoon table salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F, placing a heavy baking sheet inside.
  2. Cover the edges of the frozen pie crust with aluminum foil.
  3. Heat olive oil in a skillet over medium heat and sauté spinach until wilted.
  4. Remove spinach from heat and squeeze out excess liquid.
  5. Layer shredded Mozzarella cheese, wilted spinach, goat cheese, and prosciutto in the pie crust.
  6. Whisk together eggs, skim milk, salt, and pepper, then pour over the filling.
  7. Bake on the hot baking sheet for 15 minutes at 425°F, then reduce heat to 350°F.
  8. Remove the foil from the crust edges and bake for an additional 25-30 minutes until set.
  9. Cool slightly before slicing into 8 pieces and serving.
