Goat Cheese Prosciutto Quiche

Instructions
- Preheat the oven to 425°F, placing a heavy baking sheet inside.
- Cover the edges of the frozen pie crust with aluminum foil.
- Heat olive oil in a skillet over medium heat and sauté spinach until wilted.
- Remove spinach from heat and squeeze out excess liquid.
- Layer shredded Mozzarella cheese, wilted spinach, goat cheese, and prosciutto in the pie crust.
- Whisk together eggs, skim milk, salt, and pepper, then pour over the filling.
- Bake on the hot baking sheet for 15 minutes at 425°F, then reduce heat to 350°F.
- Remove the foil from the crust edges and bake for an additional 25-30 minutes until set.
- Cool slightly before slicing into 8 pieces and serving.
