Ingredients

The crust

  • ½ recipe homemade pie crust

The filling

  • ½ teaspoon olive oil
  • 1 teaspoon minced garlic
  • 3 cups fresh spinach
  • 4 large eggs
  • 1 cup whole milk
  • ½ cup sun-dried tomatoes, drained and chopped
  • 4 ounces goat cheese, crumbled or chopped
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. Prepare the pie crust and chill it in the refrigerator.
  2. Preheat the oven to 400°F (204°C).
  3. Blind bake the pie crust with parchment paper and pie weights for about 15-16 minutes.
  4. Remove the weights and prick the bottom of the crust, then bake for another 7-8 minutes.
  5. Reduce the oven temperature to 350°F (177°C).
  6. Sauté olive oil and garlic, then add spinach and cook until wilted.
  7. Whisk together eggs and milk, then stir in sun-dried tomatoes, goat cheese, spinach, salt, and pepper.
  8. Pour the filling into the pre-baked crust and bake for 45-60 minutes until set.
  9. Allow to cool for 15 minutes before slicing or serve at room temperature.
