Instructions
- Prepare the pie crust and chill it in the refrigerator.
- Preheat the oven to 400°F (204°C).
- Blind bake the pie crust with parchment paper and pie weights for about 15-16 minutes.
- Remove the weights and prick the bottom of the crust, then bake for another 7-8 minutes.
- Reduce the oven temperature to 350°F (177°C).
- Sauté olive oil and garlic, then add spinach and cook until wilted.
- Whisk together eggs and milk, then stir in sun-dried tomatoes, goat cheese, spinach, salt, and pepper.
- Pour the filling into the pre-baked crust and bake for 45-60 minutes until set.
- Allow to cool for 15 minutes before slicing or serve at room temperature.
