Ingredients

  • 2 cups water
  • ΒΌ cup honey
  • 2 pints fresh raspberries
  • 7 leaves fresh mint
  • 1 cup fresh lime juice
  • 12 oz. vodka
  • 2 sprigs fresh basil
  • 1.5 cups ginger beer
  • 1 cup raspberry sorbet

Instructions

  1. Whisk water and honey in a saucepan, then add raspberries and 5 mint leaves.
  2. Bring to a boil, then simmer for 10-15 minutes.
  3. Strain the mixture to discard solids and chill the raspberry juice.
  4. Combine the chilled raspberry juice with lime juice and vodka in a pitcher.
  5. Add remaining mint, basil, and ice, then stir to combine.
  6. Top with ginger beer and add scoops of raspberry sorbet before serving.
