Ingredients

Dressing

  • ¼ cup extra virgin olive oil
  • 2 tablespoons champagne vinegar
  • 1 tablespoon water
  • 2 teaspoons Garlic and Herb Seasoning Blend
  • 1 teaspoon erythritol
  • 1 teaspoon lemon zest
  • pinch salt

Salad

  • 6 ounces fresh mozzarella cheese
  • 6.5 ounces marinated artichoke hearts
  • 6 ounces large pitted black olives
  • 6 ounces grape tomatoes
  • 1 teaspoon Garlic and Herb Seasoning Blend

Instructions

  1. Prepare the dressing by blending all dressing ingredients until emulsified.
  2. Drain and cut the mozzarella into chunks, then add to a bowl.
  3. Drain the olives and artichoke hearts, and add them to the bowl with the mozzarella.
  4. Add the grape tomatoes to the bowl.
  5. Pour about ¾ of the dressing over the salad mixture and add the seasoning.
  6. Stir the salad, cover, and refrigerate to marinate.
  7. Adjust seasoning before serving.
