Caprese Salad

Ingredients

Tomatoes

  • 1 pint mixed cherry tomatoes, preferably heirloom
  • 2 pounds mixed medium and large tomatoes, preferably heirloom

Dressing and Seasoning

  • 7 Tbsp. extra-virgin olive oil
  • to taste flaky sea salt
  • to taste coarsely ground black pepper

Cheese

  • 8 oz. buffalo mozzarella or mozzarella, torn into pieces

Garnish

  • to taste small basil leaves
  • to serve toasted country bread

Instructions

  1. Toss the cherry tomatoes with 1 Tbsp. of olive oil and season with flaky sea salt.
  2. Arrange the medium and large tomatoes on a serving platter, season with flaky sea salt, and top with the torn mozzarella.
  3. Spoon the cherry tomatoes over the salad, drizzle with the remaining olive oil, and season with black pepper. Let it sit for 30 minutes.
  4. Top the salad with basil leaves and additional salt and oil if desired. Serve with toasted country bread.
