Ingredients

Dressing

  • ¼ cup extra virgin olive oil
  • 2 tablespoons champagne vinegar
  • 1 tablespoon water
  • 2 teaspoons Garlic and Herb Seasoning Blend
  • 1 teaspoon erythritol
  • 1 teaspoon lemon zest
  • pinch salt

Salad

  • 6 ounces fresh mozzarella cheese
  • 6.5 ounces marinated artichoke hearts
  • 6 ounces large pitted black olives
  • 6 ounces grape tomatoes
  • 1 teaspoon Garlic and Herb Seasoning Blend

Instructions

  1. Prepare the dressing by blending all dressing ingredients until emulsified.
  2. Drain and cut the mozzarella into chunks similar in size to the grape tomatoes.
  3. Drain the black olives and marinated artichoke hearts, then add them to a medium bowl.
  4. Add the grape tomatoes and mozzarella to the bowl.
  5. Pour about ¾ of the dressing over the salad and add the seasoning blend.
  6. Stir the mixture and refrigerate to allow flavors to meld.
  7. Adjust seasoning before serving.
