Ingredients

The meatballs

  • 1 pound ground pork
  • 3 tablespoons soy sauce
  • 2 teaspoons ginger (peeled and minced)
  • 1 clove garlic (minced)
  • 1 teaspoon toasted sesame oil
  • ½ teaspoon crushed red pepper

The cooking ingredients

  • 1 tablespoon coconut oil
  • ½ large green cabbage (trimmed and sliced or 1 whole small green cabbage)
  • 1 cup chicken broth (or veggie broth)
  • brown rice noodles cooked according to package directions (for serving)
  • green onions sliced (optional garnish)

Instructions

  1. Combine the ground pork, soy sauce, ginger, garlic, sesame oil, and red pepper flakes in a bowl and form into meatballs.
  2. Heat coconut oil in a sauté pan over medium-high heat and brown the meatballs on all sides for about 5 minutes.
  3. Add the sliced cabbage and stir for 1-2 minutes until it begins to wilt.
  4. Pour in the broth, cover, and cook until the meatballs are cooked through, about 5 more minutes.
  5. Remove the lid and simmer for an additional 1-2 minutes to reduce the liquid slightly.
  6. Serve the meatballs and cabbage over the cooked rice noodles and garnish with green onions.
