Ingredients

  • 1 cup oat flour
  • ½ cup low fat milk
  • 2 large eggs
  • 2 tablespoons all-purpose flour

Instructions

  1. Combine all ingredients in a blender and blend until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease it.
  3. Pour a small amount of batter into the skillet, swirling to coat the bottom.
  4. Cook until the edges start to lift and the bottom is lightly browned, then flip and cook the other side.
  5. Repeat with the remaining batter, stacking the crepes on a plate.
