Instructions
- Blend all ingredients in a high-speed blender until smooth and let the batter sit for 5 minutes to thicken.
- Grease a non-stick skillet and heat over medium heat.
- Pour scant ¼ cup portions of batter into the skillet, cover, and cook for 2-3 minutes before flipping and cooking for another 2 minutes.
- Transfer pancakes to a plate and repeat until all batter is used.
- Serve immediately with your favorite toppings.
