Ingredients

The cookie mixture

  • 3 teaspoons chia seeds or ground flax
  • 1 tablespoon water
  • 1 1/4 cups old fashioned oats
  • 1 cup almond meal
  • 1/3 cup pure maple syrup
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 8 tablespoons unsalted butter
  • 2 teaspoons vanilla extract
  • 4-8 ounces semi-sweet or dark chocolate

The bananas

  • 4 ripe but firm bananas
  • Ice cream for serving

Instructions

  1. Preheat the grill to medium high heat.
  2. Combine chia seeds with water in a small bowl and let sit until thickened.
  3. In a large mixing bowl, mix oats, almond meal, maple syrup, baking soda, salt, butter, and vanilla. Add the chia seed mixture and stir in chocolate.
  4. Slice the banana peel lengthwise and open it slightly.
  5. Stuff the banana with the oatmeal mixture, allowing some to pop out.
  6. Wrap the bananas in aluminum foil and place on the grill or in coals for 8-10 minutes.
  7. Unwrap the bananas, open the peels wide, add ice cream, and enjoy.
