Grapefruit Rosemary Kombucha

Ingredients

The kombucha

  • 1 gallon homemade kombucha

The tea mixture

  • 4 cups spring or well water
  • 3 bags green tea
  • ½ cup white sugar
  • 2 tablespoons fresh rosemary
  • 2 pieces grapefruit (juiced)

Instructions

  1. Boil the water in a small pot.
  2. Add the tea bags and sugar, stirring to dissolve, then remove from heat.
  3. Let the tea steep for 8 to 10 minutes, then remove and discard the tea bags.
  4. Add the grapefruit juice to the tea mixture and let it cool to room temperature.
  5. Combine the tea mixture, rosemary, and kombucha in a large pitcher and stir well.
  6. Pour the mixture into sealable glass bottles and store in a warm, dark place for 3 days for secondary fermentation.
  7. After 3 days, refrigerate the bottles to slow fermentation.
  8. When ready to drink, open the bottles carefully to release pressure and strain the kombucha into a glass.
