Homemade Kombucha

Ingredients

The base

  • 12 cups distilled water
  • 1-2 cups kombucha as starter liquid
  • 1 gallon food-grade glass container

The tea

  • ΒΌ cup loose black tea

The sugar

  • 1 cup organic granulated sugar

The SCOBY

  • 1 SCOBY

The cover

  • 1 clean cloth
  • 1 rubber band or string

Instructions

  1. Boil the water and stir in the loose tea and sugar until dissolved, then allow to cool to room temperature.
  2. Strain the tea into a clean gallon jar, then add the kombucha starter liquid and SCOBY.
  3. Cover the jar with the cloth and secure it with a rubber band or string.
  4. Place the jar in a dark, warm area to brew undisturbed.
  5. After 5-6 days, start tasting the kombucha until it reaches your desired flavor.
  6. Remove the SCOBY and save some kombucha for your next batch.
