Ingredients

The Brew

  • 1 gallon reverse osmosis water
  • 1 cup organic sugar
  • 8 bags organic black or green tea

The Culture

  • 1 cup Kombucha from previous batch or store-bought Kombucha
  • 1 unit SCOBY (Symbiotic Colony of Bacteria and Yeast)

Equipment

  • 1 unit clean glass container

Instructions

  1. Boil a gallon of reverse osmosis water in a medium-sized pot.
  2. Turn off the heat and add a cup of organic sugar and 8 bags of tea, steep for 15 minutes.
  3. Remove the tea bags and cover the pot to cool overnight until room temperature.
  4. Pour the sweet tea into a clean glass container.
  5. Add one cup of Kombucha and the SCOBY to the container.
  6. Cover the container with a cloth and secure it with a rubber band.
  7. Keep the container in a warm place, away from direct sunlight, for 7 to 30 days.
  8. Once the Kombucha tastes to your liking, remove the SCOBY and strain out any yeast tails if desired.
  9. Refrigerate the Kombucha or proceed to a second fermentation for carbonation.
  10. For second fermentation, store in an airtight container at room temperature for 2 to 5 days, releasing pressure daily.
