Instructions
- Boil a gallon of water and steep 8-10 black tea bags to make a strong tea.
- Remove tea bags and dissolve 1 cup of sugar in the tea.
- Let the tea cool completely before pouring it into a brewing container.
- Add ¼ cup of apple cider vinegar and the SCOBY to the cooled tea.
- Cover the container with a paper towel or coffee filter secured with a rubber band.
- Place the container in a warm, dark area (70° to 80°F) and let it ferment for 7-10 days.
- Taste the kombucha starting around day 5 to check for desired flavor.
- Once fermentation is complete, bottle the kombucha, leaving little head space.
- For added flavor, add juice or fruit to the bottles before sealing.
- Let the sealed bottles sit at room temperature for 1-3 days for secondary fermentation.
- Store finished kombucha in the refrigerator.
