Ingredients

The main ingredients

  • 1 gallon filtered water
  • 8-10 bags black tea
  • 1 cup granulated sugar
  • ¼ cup apple cider vinegar
  • 1 SCOBY Symbiotic Culture of Bacteria and Yeast

Optional flavoring ingredients

  • ¼-⅓ cup juice
  • to taste fresh fruit
  • to taste fresh ginger
  • to taste turmeric

Instructions

  1. Boil a gallon of water and steep 8-10 black tea bags to make a strong tea.
  2. Remove tea bags and dissolve 1 cup of sugar in the tea.
  3. Let the tea cool completely before pouring it into a brewing container.
  4. Add ¼ cup of apple cider vinegar and the SCOBY to the cooled tea.
  5. Cover the container with a paper towel or coffee filter secured with a rubber band.
  6. Place the container in a warm, dark area (70° to 80°F) and let it ferment for 7-10 days.
  7. Taste the kombucha starting around day 5 to check for desired flavor.
  8. Once fermentation is complete, bottle the kombucha, leaving little head space.
  9. For added flavor, add juice or fruit to the bottles before sealing.
  10. Let the sealed bottles sit at room temperature for 1-3 days for secondary fermentation.
  11. Store finished kombucha in the refrigerator.
