Instructions
- Select a bottle of raw kombucha with lots of yeasty floating objects and let it reach room temperature.
- In a saucepan, boil 1 cup of water and dissolve 2 tablespoons of sugar. Add 1 bag of organic black tea and let it cool.
- Remove the tea bag and pour the kombucha into the cooled sugar-tea mixture in a glass jar.
- Cover the jar with a cloth and rubber band, and place it in a warm, dark spot.
- Wait for a few days to a week until a thin film forms on top, indicating the growth of the scoby.
- Make a quart of kombucha food by boiling 4 cups of water, adding ⅓ cup of sugar and steeping with 2 bags of tea. Let it cool.
- Once cooled, add the baby scoby and liquid sediment to a larger jar with the new tea mixture and cover tightly.
- Monitor the scoby growth over the next 10-14 days until it reaches ¼ to ½ inch in thickness.
