Ingredients

  • 3 quarts purified water
  • 1 cup white sugar
  • 4-5 bags black and/or green tea
  • ½ cup fermented Kombucha Tea from a previous batch
  • 1 cloth for covering the jar
  • 1 rubber band for securing the cloth

Instructions

  1. Wash all utensils with hot, soapy water and rinse well.
  2. Boil three quarts of purified water.
  3. Add one cup of white sugar to the boiling water and boil for five minutes.
  4. Turn off the heat and add 4-5 tea bags of black and/or green tea.
  5. Steep the tea for about 30 minutes, then remove the tea bags and let the tea cool for 3 to 5 hours.
  6. Pour the cooled tea into a gallon-sized glass container.
  7. Add your Kombucha culture and fermented Kombucha Tea, ensuring your hands are clean.
  8. Cover the jar with a cloth and secure it with a rubber band.
  9. Allow the mixture to sit undisturbed in a dark, well-ventilated area for 6 to 15 days.
  10. Perform a taste test after 4-6 days to check for sweetness.
  11. When the tea is brewed to your taste, pour it into glass bottles and cap them.
  12. Refrigerate the bottles to stop the fermentation process.
  13. Leave enough starter tea from your last batch to make another batch.
