Ingredients

  • ½ cup refined coconut oil, melted and cooled (or ghee)
  • ½ cup coconut sugar
  • 2 tablespoons coconut sugar
  • 1 large egg (or flax egg)
  • 2 teaspoons vanilla extract
  • 2 cups almond flour
  • ½ teaspoon ground cinnamon
  • 1 teaspoon sea salt
  • ¾ teaspoon baking soda
  • 1 heaping cup dairy-free chocolate chips or chunks

Instructions

  1. Mix together the coconut oil or ghee, coconut sugar, egg or flax egg, and vanilla until smooth.
  2. Add almond flour, cinnamon, salt, and baking soda, and mix until incorporated.
  3. Fold in the chocolate chunks or chips.
  4. Refrigerate the dough for at least 30 minutes.
  5. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  6. Form 12 cookies using a cookie scoop or spoon and place them on the baking sheet.
  7. Bake for 10-11 minutes until the edges are golden; the cookies will continue to cook as they cool.
  8. Sprinkle with flaky sea salt and enjoy.
