Classic Tzatziki Sauce

Instructions
- Grate the cucumber and sprinkle with salt, letting it sit for 20 minutes.
- Combine garlic and olive oil in a small bowl and set aside.
- Squeeze the grated cucumber to remove excess water and mix it with Greek yogurt in a larger bowl.
- Add the garlic and olive oil mixture and lemon juice to the yogurt and cucumber, and mix well.
- Cover and refrigerate the tzatziki sauce for a few hours to allow flavors to meld.
- Before serving, stir in the fresh dill or mint and season with salt and pepper to taste.
