Instructions
- Heat oil in a non-stick pan over medium heat and cook onion and garlic until fragrant.
- Add ground beef and taco seasoning, cooking until the beef is no longer pink.
- In a new pan, heat more oil and crisp the tortillas on both sides.
- On a baking sheet, layer a tortilla with refried beans and seasoned beef, then top with another tortilla.
- Pour enchilada sauce over the top tortilla and sprinkle with mozzarella and Mexican cheese.
- Bake until the cheese is melted.
- Remove from the oven and add toppings like diced tomatoes, olives, and bell peppers. Serve with sour cream.
