Ingredients

The base

  • 4 tortillas corn or whole wheat

The toppings

  • 1 cup cooked seasoned ground beef or chicken
  • ½ cup refried beans
  • ½ cup salsa
  • 1 cup shredded Mexican blend cheese
  • ¼ cup chopped tomatoes
  • ¼ cup chopped green onions
  • ¼ cup chopped black olives
  • 2 tbsp chopped fresh cilantro
  • to taste sour cream (to garnish)
  • to taste guacamole (to garnish)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking pan with parchment paper.
  2. Place two tortillas on the baking sheet and spread a thin layer of refried beans on each, leaving a small border.
  3. Spread a layer of cooked ground beef or chicken on top of the refried beans.
  4. Spoon salsa over the meat layer evenly.
  5. Sprinkle shredded cheese on top.
  6. Place the remaining two tortillas on top of the cheese to create a sandwich structure.
  7. Bake in the preheated oven for 10 to 12 minutes until the cheese is melty and the tortillas are crispy.
  8. Remove from the oven and let cool for a few minutes.
  9. Slice each pizza into quarters.
  10. Top with chopped tomatoes, green onions, black olives, and cilantro if desired.
  11. Serve hot with sour cream and guacamole.
