Ingredients

The base

  • 8 pieces tostada shells

The filling

  • ¾ lb ground beef
  • 1 tablespoon taco seasoning
  • 2 teaspoons vegetable oil
  • to taste salt
  • to taste pepper
  • 1 cup refried beans
  • ¼ cup red enchilada sauce
  • 1 cup shredded cheese

The toppings

  • ½ cup diced tomatoes
  • ¼ cup sliced green onions
  • ½ cup sliced black olives

Instructions

  1. Heat oil in a large pan over medium-high heat.
  2. Add ground beef, taco seasoning, salt, and pepper; cook until meat is browned.
  3. Warm the refried beans while the beef cooks.
  4. Preheat the broiler.
  5. On a sheet pan, place 4 tostada shells and spread ¼ cup of refried beans on each.
  6. Top each shell with ⅓ cup of the cooked meat.
  7. Add a second tostada shell on top of the meat.
  8. Spread 1 tablespoon of enchilada sauce on each pizza and top with ¼ cup of cheese.
  9. Broil for 2-3 minutes until cheese is melted.
  10. Top with diced tomatoes, green onions, and olives, then serve immediately.
