Instructions
- Heat oil in a large pan over medium-high heat.
- Add ground beef, taco seasoning, salt, and pepper; cook until meat is browned.
- Warm the refried beans while the beef cooks.
- Preheat the broiler.
- On a sheet pan, place 4 tostada shells and spread ¼ cup of refried beans on each.
- Top each shell with ⅓ cup of the cooked meat.
- Add a second tostada shell on top of the meat.
- Spread 1 tablespoon of enchilada sauce on each pizza and top with ¼ cup of cheese.
- Broil for 2-3 minutes until cheese is melted.
- Top with diced tomatoes, green onions, and olives, then serve immediately.
