Whole Wheat Flour Tortillas

Instructions
- Mix the flour, ghee, and salt in a stand mixer and gradually add the water until a smooth dough forms.
- Divide the dough into 16 balls and cover with plastic wrap for 15 to 30 minutes.
- Heat a cast-iron skillet over medium-high heat and add ½ tablespoon of oil.
- On a floured surface, roll out a ball of dough into a thin circle.
- Cook the tortilla in the hot pan for about 1 minute, then flip and cook for another 20 seconds.
- Remove the cooked tortilla to a cooling rack and repeat with the remaining dough.
- Add the remaining ½ tablespoon of oil to the pan after cooking half of the tortillas.
- Serve the tortillas warm or refrigerate/freeze for later use.
