Ingredients

  • 5 cups white whole wheat flour
  • ½ cup melted ghee or butter
  • teaspoons salt
  • cups lukewarm water
  • 1 tablespoon olive oil

Instructions

  1. Mix the flour, ghee, and salt in a stand mixer and gradually add the water until a smooth dough forms.
  2. Divide the dough into 16 balls and cover with plastic wrap for 15 to 30 minutes.
  3. Heat a cast-iron skillet over medium-high heat and add ½ tablespoon of oil.
  4. On a floured surface, roll out a ball of dough into a thin circle.
  5. Cook the tortilla in the hot pan for about 1 minute, then flip and cook for another 20 seconds.
  6. Remove the cooked tortilla to a cooling rack and repeat with the remaining dough.
  7. Add the remaining ½ tablespoon of oil to the pan after cooking half of the tortillas.
  8. Serve the tortillas warm or refrigerate/freeze for later use.
