Ingredients

  • 2 ½ c. flour
  • 1 c. very hot water
  • 1 tsp. Kosher salt
  • ¼ c. shortening

Instructions

  1. Combine flour and salt in a heavy-duty mixer.
  2. Add shortening and mix until it resembles coarse bread crumbs.
  3. Gradually add hot water and mix until the dough comes together.
  4. Remove from mixer and divide the dough into portions based on desired tortilla size.
  5. Shape portions into round balls.
  6. Preheat a non-stick or cast-iron skillet to medium-low heat.
  7. Flatten each dough ball and roll to desired thickness.
  8. Place the raw tortilla on the preheated skillet.
  9. Cook until bubbles form, then flip and cook for another 30-45 seconds.
  10. Stack cooked tortillas to keep warm or wrap in foil to serve later.
