Ingredients

  • ½ cup pumpkin puree
  • 2 tbsp 1% fat cottage cheese
  • 2 tbsp 0% fat Greek yogurt
  • 2 egg whites
  • 2 tbsp buttermilk
  • 1 tbsp molasses
  • ½ tsp cinnamon
  • 1/8 tsp clove
  • 1/8 tsp allspice
  • 1/8 tsp ginger
  • 1/8 tsp four spice
  • pinch salt
  • 1 tbsp pumpkin seeds
  • 1 tbsp flaxseed meal
  • ½-¾ cup unsweetened soy milk

Instructions

  1. Combine all ingredients in a food processor.
  2. Process until smooth.
  3. Transfer to a glass and top with yogurt and pumpkin seeds if desired.
