Ingredients

The base

  • ½ cup coconut sugar
  • ¾ cup coconut oil or butter
  • ½ tsp vanilla extract
  • 2 ½ cups gluten free rolled oats

The filling

  • ¾ cup Spread The Love Peanut Butter
  • ½ cup dairy free chocolate chips
  • 1 scoop Further Food Chocolate Collagen (optional)

Instructions

  1. Line a baking dish with parchment paper and spray with oil.
  2. Melt coconut oil/butter, vanilla, and coconut sugar in a small pan over low heat.
  3. Stir for a few minutes, then add oats and cover for 5-6 minutes on low heat.
  4. Press ¾ of the mixture into the bottom of the baking dish.
  5. Melt chocolate, peanut butter, and collagen (if using) in a microwave-safe bowl in 30-second intervals, stirring until combined.
  6. Pour the melted mixture over the oat base and top with remaining oats, pressing down.
  7. Refrigerate for at least 4 hours before cutting into bars.
  8. Store in the refrigerator or freezer.
