No Bake Peanut Butter Chocolate Oatmeal Bars

Instructions
- Line a baking dish with parchment paper and spray with oil.
- Melt coconut oil/butter, vanilla, and coconut sugar in a small pan over low heat.
- Stir for a few minutes, then add oats and cover for 5-6 minutes on low heat.
- Press ¾ of the mixture into the bottom of the baking dish.
- Melt chocolate, peanut butter, and collagen (if using) in a microwave-safe bowl in 30-second intervals, stirring until combined.
- Pour the melted mixture over the oat base and top with remaining oats, pressing down.
- Refrigerate for at least 4 hours before cutting into bars.
- Store in the refrigerator or freezer.
