Ingredients

  • 1 cup pine nuts, soaked overnight
  • 2 tablespoons lemon juice
  • 1 tablespoon water
  • 1 unit scallion, minced
  • 1-2 teaspoons fresh thyme
  • ΒΌ teaspoon celtic sea salt

Instructions

  1. Rinse the soaked pine nuts in cold water and discard the soaking and rinsing water.
  2. Place the pine nuts in a food processor with lemon juice and water.
  3. Process for 1-2 minutes, scraping down the sides frequently until smooth.
  4. Add the minced scallions, thyme, and salt, and process until the texture resembles ricotta.
  5. Transfer the mixture to a serving dish and serve with your favorite dipping vegetables.
