Ingredients

The dip

  • 16 ounces whole milk ricotta cheese
  • ½ teaspoon salt
  • 2 teaspoons fresh lemon juice
  • zest from one lemon lemon zest
  • ¼ teaspoon black pepper
  • drizzle none honey (optional)
  • to taste none tender herbs (parsley, basil, or mint)

Optional toppings

  • to taste none fruit (figs, strawberries, pears)
  • to taste none toasted nuts (pistachios, slivered almonds, pine nuts, hazelnuts)
  • to taste none savory toppings (olives, roasted cherry tomatoes, pickled peppers, sautéed mushrooms)
  • to taste none balsamic glaze

Instructions

  1. Place ricotta cheese in a food processor and add salt and lemon juice.
  2. Blend until completely smooth, about one minute.
  3. Scoop the ricotta into a wide, shallow bowl.
  4. Sprinkle with lemon zest, fresh pepper, a drizzle of honey, and fresh herbs.
  5. Serve with bruschetta, rustic seed crackers, or any crusty bread.
