Instructions
- Rinse the soaked pine nuts in cold water and discard the soaking and rinsing water.
- Place the pine nuts in a food processor with lemon juice and water, and process for 1-2 minutes until smooth.
- Add the minced scallions, thyme, and salt to the mixture and process until the texture resembles ricotta.
- Transfer the mixture to a serving dish and serve with your favorite dipping vegetables.
