Ingredients

The crust

  • 22 pieces regular Oreo cookies
  • 5 Tablespoons unsalted butter, melted

The brownie filling

  • ½ cup unsalted butter
  • 2 Tablespoons vegetable oil or melted coconut oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 large egg yolk
  • 2 teaspoons pure vanilla extract
  • ¾ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ¼ teaspoon salt
  • ¾ cup chopped pecans
  • ¾ cup semi-sweet chocolate chips

The caramel sauce

  • 6 Tablespoons unsalted butter
  • ¾ cup packed brown sugar
  • ¼ cup heavy cream
  • ¼ teaspoon salt
  • Tablespoons light corn syrup

The toppings

  • 1 cup chopped pecans or pecan halves
  • 2 ounces semi-sweet or milk chocolate, finely chopped
  • to taste whipped cream
  • to taste vanilla ice cream

Instructions

  1. Preheat the oven to 350°F (177°C).
  2. Make the Oreo crust by pulsing the cookies into crumbs, mixing with melted butter, and pressing into a 9-inch pie dish.
  3. Prepare the brownie filling by melting the butter, mixing with oil and sugar, then adding eggs and vanilla.
  4. Stir in cocoa powder, flour, and salt, then fold in pecans and chocolate chips.
  5. Spread the brownie batter into the crust and bake for 30 minutes, then tent with foil and bake for an additional 8-10 minutes.
  6. While the pie bakes, make the caramel sauce by heating butter, brown sugar, heavy cream, salt, and corn syrup until combined and simmering.
  7. Remove the pie from the oven, prick holes in the surface, and drizzle warm caramel sauce over the pie.
  8. Let the pie cool for about 1 hour before adding toppings.
  9. Top with pecans, whipped cream, and melted chocolate before serving.
