Ingredients

  • 1 cup almonds
  • 1 cup pecans
  • 1 cup walnuts
  • ½ cup sunflower seeds
  • ½ cup flaked coconut (optional)
  • ¼ cup chia seeds
  • ½ cup flaxseed meal
  • 2 scoops Vital Proteins Collagen Peptides
  • 1 pinch cinnamon
  • ¼ teaspoon salt
  • ½ – ⅔ cup keto sweetener (to taste)
  • 1 large egg white (whisked until frothy)
  • 2 teaspoons vanilla extract
  • ¼ cup butter (melted) or refined coconut oil

Instructions

  1. Pulse the almonds in a food processor until roughly chopped.
  2. Add the walnuts, pecans, and sunflower seeds, then pulse until roughly chopped.
  3. Add the remaining ingredients and pulse until combined.
  4. Spread the mixture in an even layer on a baking sheet lined with parchment paper.
  5. Bake at 325°F for 18-20 minutes until golden brown and firm.
  6. Remove from the oven and let cool completely before breaking into chunks.
