Ingredients

The crust

  • 1 cup all-purpose flour
  • 1 cup bread flour
  • ½ cup rolled oats
  • 1 cup dark brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ½ teaspoon cinnamon
  • 7 tablespoons butter, chilled
  • cup maple syrup
  • 5 tablespoons milk
  • 2 tablespoons vanilla extract

  • to taste marshmallows

Instructions

  1. Preheat the oven to 350°F and grease a 9x9 inch baking pan.
  2. Pulse the rolled oats into a powder using a food processor.
  3. In a large bowl, whisk together the flours, oat powder, brown sugar, baking soda, salt, and cinnamon.
  4. Cut in the chilled butter until the mixture resembles coarse meal.
  5. In a small bowl, whisk together the milk, vanilla extract, and maple syrup, then add to the dry ingredients and mix until just combined.
  6. Knead the dough briefly, adding flour if necessary to manage stickiness.
  7. Press the dough into the prepared baking pan and bake for 15 to 20 minutes until a toothpick comes out clean.
  8. Refrigerate for a few hours, then cut into bars.
  9. Top each bar with chocolate pieces and a marshmallow, then broil for about 3 minutes until the marshmallows are golden brown.
