Ingredients

Hamburger Steaks

  • 1 ¼ pounds ground beef (85% lean)
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons Montreal Steak Seasoning
  • ¼ cup crushed pork rinds (or breadcrumbs)
  • ¼ cup heavy cream
  • 1 tablespoon fresh minced parsley
  • 1 teaspoon oil
  • to taste salt and pepper

Mushroom and Onion Gravy

  • ¼ cup diced onions
  • 8 oz sliced button mushrooms
  • ¼ cup water
  • cup heavy cream
  • 2 tablespoons whisky (optional)
  • 1 teaspoon beef base (bouillon)
  • 1 tablespoon butter

Instructions

  1. Soak the crushed pork rinds in heavy cream to make a panade.
  2. Combine the ground beef with Worcestershire sauce, steak seasoning, parsley, and the soaked pork rinds.
  3. Form the mixture into 4 patties and season with salt and pepper.
  4. Heat oil in a skillet and cook the patties for about 3 minutes on each side, then remove and cover.
  5. In the same skillet, add butter and mushrooms, cooking for 1 minute before adding onions.
  6. Stir in beef base, whisky, and water, scraping the pan for flavor.
  7. Add heavy cream and any juices from the patties, simmer until thickened.
  8. Serve the gravy over the hamburger steaks.
