Ingredients

The spinach

The sauce

  • ½ cup heavy cream
  • ¼ cup milk
  • 4 oz cream cheese, softened
  • ½ cup parmesan cheese, freshly grated
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. Blanch the baby spinach in boiling salted water for 30 seconds, then drain and cool in tap water before squeezing out excess moisture.
  2. In a large skillet over medium heat, melt the butter, then add the onion and garlic, cooking until fragrant.
  3. Stir in the heavy cream, milk, and cream cheese, allowing it to simmer until the cream cheese has melted.
  4. Season the mixture with salt and pepper, then add the blanched spinach and grated parmesan cheese, stirring to combine.
  5. Remove from heat and serve immediately.
