Ingredients

The chicken

  • 2 pieces split chicken breasts, bone-in, skin on

The seasoning mixture

  • 1 ½ tablespoons extra virgin olive oil
  • 1 tablespoon minced garlic
  • ½ teaspoon dried oregano
  • ½ teaspoon dried rosemary
  • 1 medium lemon (divided)
  • ¾ teaspoon kosher salt (plus additional for serving)
  • ½ teaspoon ground black pepper
  • to taste chopped fresh herbs (optional for serving)

Instructions

  1. Preheat the oven to 350°F and line a baking dish with parchment paper.
  2. Arrange the chicken in the dish, skin-side up, and pat dry with paper towels.
  3. Mix the olive oil, garlic, oregano, rosemary, and lemon zest in a bowl.
  4. Brush the mixture over the chicken and squeeze half of the lemon over it.
  5. Tuck lemon wedges around the chicken and sprinkle with salt and pepper.
  6. Bake for 35 to 45 minutes until the chicken reaches 165°F internally.
  7. Optionally broil for 2 minutes for a crispy skin.
  8. Let the chicken rest for 5 to 10 minutes before serving.
