Four Bean Beef and Beer Chili

Ingredients

The base

  • 2 tablespoons olive oil
  • 1 large sweet onion, chopped
  • 2 cloves garlic, minced
  • 2 pounds ground chuck or ground sirloin

The liquids

  • 12 ounces dark beer or your favorite beer, root beer, or Dr. Pepper
  • 24 ounces heavy crushed tomato

The beans

  • 15 ounces kidney beans, drained and rinsed
  • 15 ounces chili pinto beans, drained and rinsed
  • 15 ounces black beans, drained and rinsed
  • 15 ounces cannellini beans, drained and rinsed

The seasonings

  • 3-4 tablespoons brown sugar
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons dried oregano
  • 2 teaspoons sea salt or to taste
  • 2 tablespoons corn masa or fine cornmeal

Instructions

  1. Heat olive oil in a large skillet or pot and sauté chopped onions and minced garlic until lightly cooked.
  2. Add ground beef and cook until browned, breaking up clumps as needed.
  3. Stir in brown sugar and seasonings, then mix well.
  4. Add crushed tomatoes, beans, and beer, combining all ingredients.
  5. Reduce heat to a simmer and cook for 1-2 hours, stirring occasionally.
  6. Adjust thickness with chicken stock or water if necessary, and re-season to taste.
