Instructions
- 1. Line and grease an 8×8-inch baking dish with parchment paper.
- 2. In a deep pot, melt the butter over medium heat.
- 3. Once melted, add the sweetener, heavy cream, and vanilla extract, if using.
- 4. Bring the mixture to a simmer, stirring often until it bubbles.
- 5. Use a candy thermometer to check the temperature; remove from heat at 145C/290F.
- 6. Spoon the candy mixture into the lined pan and refrigerate until firm.
- 7. Once firm, break apart into pieces.
