Gourmet Cowboy Hamburger Sliders

onion, halved and sliced

balsamic vinegar

Instructions
- Form the ground beef into 8 small patties and season with salt and pepper.
- Heat olive oil in a medium sauté pan over medium-high heat and add the sliced onions.
- Sauté the onions for 7-10 minutes until they start to caramelize.
- Add balsamic vinegar to the caramelized onions and sauté for another 2-3 minutes, then remove from heat.
- In the same pan, add the diced pancetta and sauté for about 5 minutes until slightly browned.
- Preheat the grill to medium-high heat.
- Grill the patties for 2-3 minutes on each side.
- Grill the buns for 1-2 minutes on each side.
- Assemble the sliders with a toasted bun, burger patty, pancetta, caramelized onions, and mashed avocado.
