Gourmet Cowboy Hamburger Sliders

Ingredients

  • 1 lb lean ground beef (93/7)
  • 8 whole whole wheat slider buns
  • 4 oz pancetta, diced
  • 2 large avocados, mashed
  • 1 tbsp olive oil
  • 1 large onion, halved and sliced
  • 2 tbsp balsamic vinegar
  • to taste salt & pepper

Instructions

  1. Form the ground beef into 8 small patties and season with salt and pepper.
  2. Heat olive oil in a medium sauté pan over medium-high heat and add the sliced onions.
  3. Sauté the onions for 7-10 minutes until they start to caramelize.
  4. Add balsamic vinegar to the caramelized onions and sauté for another 2-3 minutes, then remove from heat.
  5. In the same pan, add the diced pancetta and sauté for about 5 minutes until slightly browned.
  6. Preheat the grill to medium-high heat.
  7. Grill the patties for 2-3 minutes on each side.
  8. Grill the buns for 1-2 minutes on each side.
  9. Assemble the sliders with a toasted bun, burger patty, pancetta, caramelized onions, and mashed avocado.
