Beef Sliders With Provolone and Balsamic Onions

Ingredients

The beef patties

  • 2 lb. ground beef (20% fat)
  • to taste Kosher salt
  • to taste freshly ground pepper

The toppings

  • 4 slices provolone piccante or sharp provolone cheese
  • 8 pieces potato slider buns
  • 1 large red onion
  • 3 Tbsp. balsamic vinegar
  • 1 tsp. sugar
  • to taste aioli or store-bought mayonnaise

Instructions

  1. Divide the ground beef into 8 portions and shape each into a patty, seasoning with salt and pepper.
  2. Preheat the grill to medium-high heat and grill the patties until charred, about 3 minutes per side, adding cheese on top during the last 3 minutes.
  3. Let the patties rest for 5 minutes after grilling.
  4. Grill the potato buns cut side down for about 30 seconds until lightly charred.
  5. Combine sliced onion with balsamic vinegar, sugar, and a pinch of salt, letting it sit for 5 minutes.
  6. Assemble the sliders with the patties, buns, onions, and aioli.
