Beef Sliders With Provolone and Balsamic Onions

Instructions
- Divide the ground beef into 8 portions and shape each into a patty, seasoning with salt and pepper.
- Preheat the grill to medium-high heat and grill the patties until charred, about 3 minutes per side, adding cheese on top during the last 3 minutes.
- Let the patties rest for 5 minutes after grilling.
- Grill the potato buns cut side down for about 30 seconds until lightly charred.
- Combine sliced onion with balsamic vinegar, sugar, and a pinch of salt, letting it sit for 5 minutes.
- Assemble the sliders with the patties, buns, onions, and aioli.
