Ingredients

Crispy Onion Rings

  • 1 cup all-purpose flour, divided
  • 1 teaspoon kosher salt, plus more for seasoning
  • ½ teaspoon coarsely ground black pepper
  • ½ teaspoon granulated garlic
  • ½ teaspoon paprika or cayenne pepper
  • ½ teaspoon baking powder
  • ½ cup milk or water
  • 1 large egg, lightly beaten
  • 1 medium Vidalia onion, thinly sliced into rings
  • as needed unit canola or vegetable oil, for frying

Sliders

  • 2 pounds ground beef, 80% fat and 20% lean
  • 1 teaspoon kosher salt
  • 1 teaspoon coarsely ground black pepper
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons vegetable or canola oil
  • 6 slices sharp cheddar cheese, cut in half crosswise
  • 12 slices bacon, cut in half and cooked until crispy
  • 12 unit pretzel buns
  • as needed unit barbecue sauce
  • 6 leaves green lettuce, cut in half

Instructions

  1. Heat oil in a pot until it reaches 360°F for frying the onion rings.
  2. In a bowl, whisk together half a cup of flour, salt, black pepper, garlic, paprika, baking powder, milk, and egg until smooth.
  3. Dredge onion rings in flour, then dip into the batter.
  4. Fry the battered onion rings until golden brown, about 3 minutes, and drain on paper towels.
  5. Preheat a grill to medium heat for the sliders.
  6. Mix ground beef with salt, pepper, garlic, and Worcestershire sauce, and shape into 12 patties.
  7. Brush patties with oil and grill for about 4 minutes on each side, adding cheese and bacon during the last few minutes to melt.
  8. Assemble the sliders by spreading barbecue sauce on the buns, adding patties, crispy onion rings, and lettuce, then closing with the top bun.
