Instructions
- Cook the bacon in a skillet until half-cooked, then chop it and mix with ground beef and cheddar cheese.
- Season the mixture with black pepper and kosher salt, then form into ¾-inch thick patties.
- Refrigerate the patties for about 20 minutes.
- Preheat the grill on high and cook the onions in reserved bacon fat until caramelized.
- Grill the burgers for 3-5 minutes per side, adding American cheese to melt on top.
- Toast the buns on the grill.
- Mix mayonnaise with ketchup and optionally BBQ sauce, then spread on the buns.
- Assemble the burgers with toppings and serve.
