Ingredients

The burger

  • 2 pounds 80% ground chuck beef
  • ½ cup diced Cache Valley Dairy medium cheddar cheese
  • 2 teaspoons freshly ground black pepper
  • 1 ½ teaspoons kosher salt
  • 3 slices thick cut bacon
  • 6 buns brioche or white
  • 6 slices Cache Valley Dairy American cheese
  • 1 yellow onion thinly sliced

The toppings and sauces

  • ¼ cup mayonnaise
  • ¼ cup ketchup
  • 1 tablespoon BBQ sauce (optional)
  • Sliced tomato
  • Sliced pickles
  • Lettuce

The cooking fat

  • 3 tablespoons butter

Instructions

  1. Cook the bacon in a skillet until half-cooked, then chop it and mix with ground beef and cheddar cheese.
  2. Season the mixture with black pepper and kosher salt, then form into ¾-inch thick patties.
  3. Refrigerate the patties for about 20 minutes.
  4. Preheat the grill on high and cook the onions in reserved bacon fat until caramelized.
  5. Grill the burgers for 3-5 minutes per side, adding American cheese to melt on top.
  6. Toast the buns on the grill.
  7. Mix mayonnaise with ketchup and optionally BBQ sauce, then spread on the buns.
  8. Assemble the burgers with toppings and serve.
